Welcome to 2012!

As most of you already subscribed to me, will be falling over!! I am back! LOL!  2011 proved to be a busy year and keeping up a blog seemed to get lost in the chaos of ranch life, clinic life and just breathing!  I have changed it around, gave it a facelift as best  I could and ready to begin…again!

News on the homefront!  We have 50 head of first calve heifers now on the ranch, tagged with bright pink tags in honor of all our clients and friends who have beaten breast cancer!  Things will get busy around March 1st!! 20 head of young roping steers are in the dry lot to work our colts on, being it been a wonderfully warm winter! 51 degrees today!

The clinic scene for 2012 is proving to be a busy one for Mr. Campbell!  We have scheduled not only a week long clinic in March and April but also November and December!  The 2011 fall week long clinics were a smashing success and a chance to really spend some quality time with a select few clients! There are some new clinics mixed in with the old ones! A few invitation only clinics along with some new classes of “stockmanship”! All the critters survived Christmas and New Year’s! Although we had a heck of  Christmas party lasting til 2:30 am! and went to a friend’s party for New Year’s, where we rang the bell with a good swig of Champagne!  

I am sure 2012 is going to be a fabulous year! I’ve gotten new big girl panties to wear! and  I am promise you we’ll have a hell of a ride!

Well, it’s Saturday — another week survived and more to come!  I spend the morning basking in the glory of a sunshine!!! Visit with faraway friends and work on my garden!  With a few chores to top it off!  As you can see I have tulips, crocus, iris and my lilies starting to appear! Woo hoo!
Must mean that Mother Nature is starting to figure out it’s actually spring and we should move on from this snow!!!

As I drive my skidsteer down to the corrals in the afternoon to put out more hay as our grass is really just starting….I bring my camera incase of some entertainment!  And entertainment I got….the designer dog Casey! Half shitzu and half poodle, decides the 4 sheep need not be out, they should be put in their pen! And a picture is worth a thousand words!  You can see here, he has got the picture to gathering sheep and moving them.

It’s an amazing day in realizing how truly lucky we can be if we stop, look around and revel in the delights of life!  There is a storm looming overhead, but yet the horses are content to keep grazing on the hill side, the sheep and geese pick away delicately even though a dark cloud seems to follow them around. I pause for a moment, to hear the delight of the birds calling across the meadows, a nicker here and there as they small herd I have turned out makes sure they travel together! Even the rays of sunshine seem to keep peeking through the clouds and brighten the grass below.  It’s a moment in time where all is moving, yet all is standing still.

As I survey the country side I see that somehow a piece of fence has “had an accident” be it horse, sheep or antelope!

So, I grab my “crew” and tools and head back to the scene of the crime to erase the evidence! Fence fixing signals the true start of spring!  With snow, wind, deer and antelope running amuck!! Spring is the time to fix all fences and be sure the hot wire (my worst chore!) is still working! The other day I had driven the fence with the hotwire attached to the top, fixed all the twists and twirls and still can’t get it to work! It’s a good thing it works most of the time and the horses just know not to touch it as I still don’t have it working!!

I love Fish Tacos!

I take a couple of tilapia filets and cook them up with some “taco seasoning” then just take out of your frying pan and add a little oil, add about a cup of cooked rice and a tablespoon or two of tomato paste, a few green onions and more taco seasoning.  IF you like it hot, here’s where I also add some hot sauce!  once your rice is heated thoroughly and I flake the tilapia back into the pan, I just break it in my hand or rub it together and it will flake into your rice!  Next I chop up tomatoes, more green onions, and some lettuce!  take either a burrito or a taco (whether you like soft or crunchy!) and fill away — I also take a dollop of sour cream and my homemade salsa as finishing touching….A friend of mine likes to put a squeeze of lemon on the fish before  flaking it into the rice — I say to each their own! Take my recipe and turn it into yours!

The great thing about fish tacos, is you can also make it into a salad and just crumble a taco or taco chips!  You can add cheese if you like and a little ranch dressing! It’s about being light and fun with your Spring time meals!

"Corky"

In  a world of pressure, stress and an amazing amount of patience I must have, sometimes, life gets the best of me.  I wish to sell everything and take a job bagging groceries at Safeway.  Of course, I will live in an apartment in Hawaii or Florida! Somewhere definitely warm and sunny! When all else fails, the chocolate doesn’t

work, jumping up and down hollerin’, reading self help, stress reliever books!  I call on the best guru, mentor and friend I know.  Some know him as Wooly Grandpa, others as Walter, me….he is Dad, good ol’ dad. After all the frustration, questions, spiritual yearnings are said through blubbering and sniffles, he always has the best answer.  Once it was go kick a cow and I never laughed so hard in my life.  But the other day it was take my cow dog “Corky” and let him chase ol’ Carpet around the field  a time or two.  Do something to bring a smile to your face.  Little did he know, the thought of him dropping all he had to do, to listen to his 40 year old daughter moan the blues that life is hard, brought that smile long before he said it.

 

I also have these two sisters, that are wonderful friends to me and each time I hear their voices it just lifts my heart.  The next day after an hour long good belly laugh with them, I feel lighter.  It’s like they are Ying and  Yang — each one of them a beautiful individual but together, they can save my world!

Which leads me to today….it was a ‘bizness” day in Cheyenne and there wasn’t a meeting or person I met that didn’t leave me with a smile and that warm fuzzy feeling!  Even the lady outside Sam’s Club that saw my 4 bags of dog food and offered to help me unload it, made me laugh, that good laugh, that humanity, integrity and just plain ol’ being kind still exists!

As I peruse (not sure of the spelling) facebook, I see a friend of mine getting ready for her dressage show this weekend and can just picture the beauty the judges will behold when she enters the ring on her black steed!  I have pictured her ride in my mind and it’s perfect!  Next I see one of my friends has planted part of her garden, I giggle, funny how did she know that’s what I was just thinking of doing!  Then another friend is lying on a beach somewhere in Mexico and I wish I was beside her enjoying her friendship and of course a direct IV of margaritas being served to me!

I guess it’s like my dad says, it’s never as bad as it seems and not to be afraid of “it”  – whatever “it” is — I can handle “it”!! To take me right back to the good life, the grateful life, late last night I watched my favorite cooks “Two Fat Ladies” and if you have never seen them, you have missed a lifetime of good laughs and good food!  They cook just like me, or should I say I cook like them!  And when my friend Faye is around, we can pull off “Two blonde Chicks” just like them!

I figure I haven’t been to prompt on the recipes lately and am working hard to get all my recipes together in a latest cook book called WTF!  But the ladies reminded me of a great favorite.  Heuvo Rancheros!

Of course you can double, triple or shorten this recipe, it’s not exacting and add what you like or leave out things you don’t!

I start with probably two cups of ground beef, or you can use pork sausage, or you can mix it!

I brown it in the pan (don’t salt it until it is browned) then add a chopped onion, two cloves of garlic smashed, grated or chopped.  Next if it’s summer and you can go to the farmers market and get fresh roasted peppers(which I then grind up and freeze for later) add probably 1 cup of chopped roasted pepper.  You can also buy cans of diced chilis or peppers. And either a can of crushed tomatoes or chop up some fresh tomatoes. I also add to taste, Worcestershire sauce, tabasco sauce, and crushed red pepper.

Next take some of those small corn tortillas and put a layer of oil in a fry pan, cook them very quickly in the oil, more to just soften them and make them pliable rather than crispy…I do about 6 (depends on the kinda folks you are feeding!)

If you are feeding cowboys….I fry two eggs per tortilla….Put the tortilla on the plate, then an egg, then a big scoop of our meat mixture, a good sprinkle of montery jack cheese and then another egg an last a dollop of my JT Salsa with a dollop of sour cream!  Voila!

As I said, you can do the recipe how ever you want, some folks don’t even like eggs, so I will put more meat, then maybe some fried potatoes and melt the cheese! When I serve it for ladies I try to make the egg almost perfectly round and place it on top and then the cheese and melt it all up!

As you can see by the words, take, make and shape this to YOUR flavor, YOUR look!  Don’t worry about exacting measurements, just worry how spicy you want it!!! lol!!

Lone Dove in the snow!

Well, let’s see it’s Saturday morning, foggy, I’ve loaded out a truck of manure to a friend in exchange for two great bagels! Done my feeding, scrapped a pen with my skidsteer and am looking at the weather and here comes the rain! Woo Hoo! Rain, Rain, Rain and then some sunshine and the grass which is bright green and 1/2 inch tall will become a jungle!! I have sprinkled my coffee grounds over my garden, which I found out feeds the worms! I have potatoes that are sprouting that I need to plant, onions and a place for my garlic!

But, I think today is a better day to do some spring cleaning than interrupt Mother Nature and her plans of rain!  My week was filled with catching up on office work (my least favorite path to go down!) and getting all my horses back in to start riding again!  I saw my garden also needs some work before I get to seeding, the lawn is really starting to turn green and my dang geese have given up sitting on the nest!  Maybe she knows something I don’t about the eggs, but I guess Mother Nature has a plan….Two of my cats, Laverne and Shirley, both orange in color are looking to be mom’s soon! And my jail sheep are back to enjoying themselves on some green grass!  Next project is going to be sheering them! Yup — I am going to attack sheering them!! I figure the wool will make some great stuffing for dog beds around here! Look for info on that upcoming project!! There in a nutshell I have caught you up to the minute on ranch life!

Sometimes, I am not sure if I live in the “fast” lane or the “slow” lane!  So I figure I must live on the line and sometimes that line is dotted and sometimes it’s solid! And where all is not kittens and cuddles and most of the time I find myself swimming the moat trying to get to the castle! And even more so, I wish the dang moat wasn’t so deep and wide!  Although I find to that I am much stronger than I thought and can swim much longer than I thought! I think alot of people don’t know just how tough they truly are. Focus is something that I think we lose sight of….whether it’s for the day, the month or the year! I like many I am sure start to obsess of the not so great, the failure or the lack of success.  But when we can step back and take sight of ourselves outside and in, we can forgive ourselves for mistakes.  I didn’t say make excuses, not do the work, not try hard, but look inside ourselves find our strengths and bring them back to the outside to help us carry on.

It sounds silly but it’s like watching my dogs….they hunt the rabbit, chase the rabbit and lots of times lose the rabbit! How come they don’t think it’s a failure? You notice they miss the rabbit, they jump in the water trough cool off and then stretch out for  a break! You never see them hang their heads and mope around? Was their focus the hunt that they were excited in? The journey? not the end result? Would catching the rabbit just be the icing on the cake? and that it was the success of the whole day of sniffing out the rabbit, stalking it, then chasing it across the field? Why are they so dang happy all the time?

 

 

On another note….A good friend of mine that is moving to Mexico sent me this cool Margarita recipe! I can’t wait to try it — some of you may beat me to it and I hope to hear your feedback!

Hibiscus Margaritas

2 1/3 cups of water
1 1/3 cups of Jamaica flowers
1 cup of sugar

Combine water,sugar and Jamaica flowers (dried).  Bring to boil over high heat, cover reduce heat and simmer for 10 minutes.  Cool.  Then add 4 tablespoons of fresh lime juice, 6 cups of ice and 1 1/2 cups of tequila.  Blend. Serve. ENJOY!!!!!!!

Welcome to Calgary!

If you are like me, you have been around your place so long you are a part of it and when you HAVE to travel, it’s just, well just an issue!  I am lucky enough to have a BFF’s like Stephani and Jill that come and stay at my house, play with the dogs, gather the eggs and just hang out!  Once I leave I don’t think twice! And for my animals it’s like I have never left! Although I am sure the horses are glad, they get a spring break!! lol!!

I was up in Canada conducting an all girls “winglish” clinic as some folks called it!  It is at a prestigious dressage barn and a perfect blend of great dressage gals with a few country girls to shake and twist it up!  Alot of the ladies were getting ready for a show of some sort! One gal was getting ready for her Extreme Cowboy race, while another was preparing for her first spring dressage show!  Needless to say with some 14 assorted riders on seasoned horses to naughty ponies and everything in between it was one of the best times I think I have ever had!  Every lady in the class taught me something and I am grateful, I hope they got as much out of it as I did!  It just amazes me what those girls did, words can’t really express what heart and soul came from within those gals to help their horses!!

I got to spend my evenings with my best friend of 20 some years Sharon at her fancy dancy city house! With her two big honkin’ dogs — bouviers(not sure on the spelling!)  I get my own room furnished with tulips everywhere and the good ol’ hudson bay blanket to keep ya warm at night!! Which was a good thing being it snowed almost 2 feet while I was there!   I was lucky enough to be invited to the Tarp Sale at the Calgary Stampede with Sharon!  This is where companies purchase the rights to the tarps the chuckwagon fellas race during the Calgary Stampede!  I got to see a few old friends like Kirk Sutherland, one of the top-selling “tarps” and met some young fellas that educated me on some new ways of feeding cattle! All and all with a good Canadian Caesar to drink and good friends to “hang” with it was quite the night!

Trips to Canada are always welcomed by my kick ass, awesome dad who spends the day sitting on cold bleacher, intent to just watch me and the gals at work!  And of course my super cool big brother always comes and I put him to work trimming horses that need it!  This time he brought his youngest son, Liam and lucky for him we had a horse he could ride and got to join the ladies club for an afternoon!

Once I flew home, drove 3 hours and became swamped with hugs and kisses from my 6 dogs….I settled into my own bed for an unrestful sleep!  Traveling away for business is wonderful, great, faboo!! But…..alas, when I return, there is always more work to be done and the old “catch up” — I spent today paying bills, rearranging stock, cleaning, and returning phone calls! It’s definitely spring in Wyoming but this wind can seriously taking a turn at the corners of screw off and take a break!  A breeze is nice, a strong wind to blow out or in a storm ok! But just blowing to blow — Mother Nature is having some serious issues with her mind!!!

As I sit here in the quiet of my home, reading emails, I am overwhelmed by the response from my husbands’ latest clinic!  Terms like “he was on fire”, “the best clinic EVER of anyone’s”, “can’t thank him enough”, “amazing to watch a master in his profession” …….just to name some of them.  Each year he sets out on the road I worry about him and each year he shows the world he’s better than he was before…..the teacher, still a student.  It’s just amazing to watch someone of his caliber continue to get better….or maybe he’s like the horse….he’s just getting more “seasoned” now!! lol

I must say thank you to everyone who has made the last few days amazing, from my housesitters, to the gals in Calgary, to my friend Sharon, my brother for taking the time to teach me more and to my dad — the pillar of strength that keeps us all going….I think some of the ladies come to ride with me just to hang with him…he’s so cool!  And to my dogs for showing me all the love I can handle and more when I come home….it’s just the best…

Cheers my friends and remember to keep it “stupid loose” …..(if ya don’t get it….you are gonna have to just meet me one day!!)

Oscar sleeping in bed after a night of chasing coyotes!

Well after all my great critics gave me the input on my blog page….I have once again up lifted it to be easier to read and easier to navigate.  Somewhere in that process either Word Press or Go Daddy had some issues and made it near impossible to get online and change, add or delete items.  So it’s been a while since I could even get on this dang deal!!

We are getting geared up for the season of clinics, getting prepared to take in cattle and cleaning the garden and yard!  Today has rolled in some funky fog and made it much more difficult to do any outside projects!  So alas, I figured I would work on our website and blog page inbetween doing laundry and making a Sunday Supper with left overs from a birthday party!

Friday night, we had a small gathering of good friends to celebrate our buckaroo buddy Jacob’s birthday!! With grilled chicken, brisket and roasted potatoes, carrots and onions.  Dessert was a white cake with gooey blue frosting and Peter’s favorite of raspberry cheesecake!

The foggy weather got me to thinking old fashioned chicken pot pie….but I am still undecided.  I have made a base which I will show below, that I think can be turned into creamy chicken soup, pot pie or I am leaning towards chicken and dumplings!  I enjoy taking leftovers and creating a totally new and improved meal you wouldn’t even know what it was from the night before!

 

Let’s begin…you can see in the photo I am using the left over chicken and the veggies from my veggie plate (the roasted veggies were all eaten, well there is a potato or two!)  Roughly chop your veggies and get them softening in your pan.  Next roughly cube your chicken and add to the pan….let them sizzle and brown a bit with some olive oil and a pat of butter.  Now because I am dealing with left overs….I used what was left of the ranch dip (1/2 cup) ,left over sour cream (3/4 cup) and left over cream I had (1/4 cup)  – lastly I added a bit of left over butter nut squash soup (1/2 to 3/4 cup) to add a bit of a nutty flavor.

I get alot of my spices from spicemerchants.biz and this time around used some smoked black pepper, chardonnay oak smoked fleur de sel, and lakeside herb blend.  about a tsp of each, I suggest putting just a pinch in at a time until you are used to the flavors and how they unwind in the food!

 

Lastly put it on a low low simmer and let cook for a bit to be sure the chicken has absorbed some moisture and that the veggies have softened!  Then pick your flavor! As I type this

another option would be to make crepes and roll your mixture in the crepes  and drizzle with a cheesey sauce! So many choices….that is the wonderful part of WTF! (wickedly tasty food) — it’s always ever changing, molding and exploding with your taste buds!!!

Well, I better go back to preparing the hubby for his long journey across the country and back again!!

OKAY I AM SOOOOO HAPPY WE HAVE SPRING….BUT SERIOUSLY THE WIND, COULD TAKE A  HOLIDAY SOMEWHERE ELSE!  I KEEP TELLING MYSELF IT ”CLEANS” THINGS UP FOR SUMMER!

OTHER THAN RANCH DUTIES AND SPRING YARD CLEANING, ETC — LIFE HAS BEEN PRETTY DANG BORING.  I DO HAVE A NEW COCKTAIL FOR YOU TO HELP YOU SPRING INTO SPRING! (of course it’s made big — for a party!)

I PINT OF BLACKBERRIES (THEY ARE ON SALE NOW AT SAFEWAY!)

9OZ SIMPLE SYRUP

9 OZ OF LIME JUICE

3 OZ TRIPLE SEC

18OZ OF YOUR FAVORITE TEQUILA

1/2 BOTTLE OF CHAMPAGNE

I PUREE THE BLACK BERRIES WITH THE SIMPLE SYRUP, THEN ADD ALL YOUR INGREDIENTS BUT THE CHAMPAGNE.  PUT IN A SIEVE AND THIS WILL KEEP OUT THE BLACK BERRY SEEDS AND MAKE A SWEET LOOKING BASE! (WHICH I PUT IN A PUNCH BOWL) THEN GET A BIG BLOCK OF ICE (WELL AS BIG AS CAN FIT YOUR PUNCH BOWL!) ADD YOUR CHAMPAGNE AND VOILA!  IT’S A REFRESHING LIFT TO GET A KICK START ON SPRING!

 

REMEMBER TO ALWAYS REMEMBER THE GOOD OF YESTERDAY AND  YOU SEE THE GOOD IN TODAY AND FIND THE GOOD IN TOMORROW!

Welcome to the new Margaritas and Molly! I am still in the figuring process and must be a dumb bunny as I find word press harder to figure out than Final Cut Pro! Besides the fact the bazillion themes they have that I was trying to figure which one was me! There were a lot of ones I wanted to mix together but then I found this one, crisp, bright and original — me!

I have to admit I have spent my Saturday doodling with this project….hiding in my office like a little hobbit! Taking a short break (lol of 2 hours) to talk to my long-lost friend that only lives 3 hours away!  Both of us are head chore girls of our ranch and we have gotten our PHD (piled high and deep) from CSU (clean shit up).  It was so good to hear her voice and the sound of her laughter!  Being chorologists, we are always pressed for time to spend with each other….but never a moment is lost when we finally speak…you know the friendship that knows no time.

After my visit, I figured I better get outside to do the chores! And found I had missed a wonderfully warm and windy day!  But everyone needs a day off I figure!

And now, here I am back at my little blog trying to figure out how to make it most blog friendly! Any suggestions are gladly appreciated!

You will see in categories I am going to try and post a new cocktail now and then as it seems only fitting we eat, drink and be merry!  And Merry I am at this moment as in the photo above my pussy willow has bloomed! Yippee!!! When I was  young living in Canada that was a sure sign spring was on its way and we had a huge pussy willow in the back of our yard — it’s a warm child hood memory that starts me remembering all the great things of being a kid!

Spring this year will be spectacular! I have rearranged the garden barrels added more dirt! And after visiting with the UPS/chief Gardner of the area — I am thinking I need more garden space for all the ideas of purple potatoes and big pumpkins!! I’ve started the “big clean” outside which involves moving back all the gravel my loving husband has plowed onto the lawn! Cleaning horse pens and finding all the crevices that are hiding tumbleweeds from the high winds of winter! In Wyoming it’s quite fun to clean out side, especially when the wind blows, just makes everything even more clean like a clean slate to paint the scenes of summer!

Other news on the ranch front, the mother goose is “brooding” her stash of eggs, so I would think in a few weeks we’ll have little mottled colored goslings to play with! There is an orange cat up top at the ranch house that I am sure will be having some kittens!  And so far all my little seedlings are doing well!

As I said earlier it’s my day off and I figure a good movie may just be in order with the comfort of the pj’s and some popcorn!  (and for those of you who really know me, I’ll be in the office messing with this dang blog, only to realize it will be 11 pm and I will have missed all the good movies!LOL) I hope y’all like my new page and let me know what you would like to see different or just if ya like it or not!

Well, it’s the first clinic of the year and Canadians are happy to have Peter back!! It’s back to the ranch and me!  The weather so far is showing us spring like evidence with green grass peaking out near some trees and on the south side of my house!!

My indoor green apartment (not big enough to be a house) is going well, you can see cauliflower loves to grow in this atmosphere! I am going to start waterering my strawberries and put them in the sunshine to see if they come back! And my “stick” raspberries are getting some green leaves!

Oh I can’t wait — I am going to start working on the garden — so I should have some before and after pics for ya!

The horses are starting to shed so it must be spring!!! and my mother goose now has a bazillion eggs!  My dear friend Jill brought her little girl Mesa out for a day a the ranch and to ride with me….we spied on Mother Goose and when she left her nest we couldn’t even dig up all the eggs to see how many – but if they all hatch it should be a huge herd of goslings running around!

My other friend Sharon keeps asking me to go on a trip with her.  First she suggests Mexico and that day the news tells us that Mexico is getting worse for robbing, etc….So I suggest Hawaii, I get her hooked on that and this morning the news tells us there are tsunamis (not sure on the spelling) hitting Hawaii….so I have come to the conclusion she needs to come to the Hotel Hat Creek for some Wyoming spoiling! I know we won’t have some great waters flood us out! And I am pretty sure unless we venture to Denver we won’t get robbed in the big town of Wheatland! I told her I would take her fake and baking each day — twice a day if need be and we can sprinkle sand at her feet….she’s not finding the humor in this….I told her she can get a massage and pedicure everyday….now I have her attention! And  I finished it by saying I will cook her whatever she desires!!

So….we(me and all the critters) are waiting to see if she likes the vacation package at Hotel Hat Creek….

I have a quick recipe for you this week, it’s super super simple!  Cheesecake…..One package of cream cheese, one can of sweeten condensed milk….whip it with egg beaters or your kitchen aid…add 1/3 cup of lemon juice, keep beating it for about 1 minute? or so….and it will thicken right up — pour it into either a homemade graham cracker crust or I must admit an oreo crust is delicious! put in the fridge for a few hours top with fresh fruit and voila easy peasey cheesecake!
